Chipa Paraguaya is my current take on this classic chipa mestiza, the beloved Paraguayan cheese bread made with yuca starch and cornmeal. I’ve made thousands of chipas at home over the years, and my recipes are always evolving as I adjust ingredients and techniques. This is the version I’ve landed on—soft, cheesy, and naturally gluten-free, with the classic flavor and chewy texture that make chipa so beloved.
